They were also established in the Central Valley, in the Province of San Jose, to feed larger populations groups of Costa Rica. In the 17th century, Guanacaste Province was still very inaccessible and difficult to develop, due to lack of roads and communication. During mid 18th century is when Guanacaste begins to develop a cattle production activity and the first Haciendas begin to appear, with the first official Hacienda registered in 1720 and in 1780’s in Nicoya Peninsula. By early 1900’s, with the introduction of the Zebu breed (Brahman and Nelore breeds) tolerant to dry areas, there were more than 40 haciendas in Guanacaste Province alone, feeding the increasing population of the central valley of Costa Rica. These breeds are the main cattle breed found in Costa Rican haciendas today.   The Hacienda’s cowboy or “Sabanero” is an iconic figure in the collective memory of the haciendas in Costa Rica, particularly in Guanacaste region. Considered as the horseman of the savannas, he was the one who skillfully moved through the pastures and mountains, tending to the cattle of the haciendas. An expert rider, driver of endless and lonely roads, he summoned the cattle to the land, the corral, and the long cattle drives for sale to the central valley of Costa Rica.   Haciendas in Costa Rica continue the tradition of cattle production, while others have evolved into agriculture for local and export consumption, forest plantations, and even tourism projects.
